Vegetarian Sausage Rolls

Struggling with some veggie recipes that the kids will eat? Try these easy and delicious veggie-packed vegetarian sausage rolls! You can really use whatever veggies you have available - I recommend using potato or sweet potato as a base to hold it all together. Chickpeas work great too.

Prep Time: 40 minutes Cook time: 25 minutes Servings: 6 People

Ingredients

4 potatoes, peeled and cut into small same size pieces

1 can of chickpeas, rinsed (I also peel the chickpeas)

1 large leek, finely chopped

1 large carrot, grated

1/4 wombok cabbage, finely chopped

2 celery stalks, finely chopped

3 spring onion, finely chopped

4-5 garlic cloves, finely chopped

1 tbsp tomato paste

2 tsp smokey paprika

1 tsp ground cumin

1 tsp ground coriander

salt & pepper

bunch of fresh parsley, finely chopped

1 packet puff pastry, preferable the ones made with butter

1 egg, lightly beaten (for brushing)

Method

  1. First, cook your potatoes. In a large pot add your potatoes, cover with water and a pinch of salt. Boil until soft (roughly 20 minutes)

  2. Preheat oven to 190 °c

  3. In a saucepan over medium heat, add 1tbsp of oil and sauté your other vegetables. Start with your leek, then celery. Sauté these for 5 minutes then add in your garlic, carrot and cabbage. Sauté until they've wilted approx 5 minutes.

  4. With a masher, mash your potatoes and chickpeas. Don't over mash them as you still want a bit of texture to your mixture.

  5. In a large bowl, add your potatoes, chickpeas and sautéed vegetables. Now add in the rest of your ingredients. Combine well.

  6. Now its time to roll up! Cut your puff pastry in half (watch video on instagram which shows how I roll up the sausage rolls).

  7. Add filling into the middle of the pastry, shape it into a long log. Brush the top edge of the pastry with egg, then roll up sealing the edge with the egg wash.

  8. Refrigerate rolls for 20- 30 minutes (optional)

  9. Cut up the rolls into 4 equal pieces- brush the top of the rolls with egg (this makes the pastry go a lovely golden brown)

  10. Sprinkle the rolls with sesame seeds - I used a dukkah, zaatar mix which was delicious!

  11. Place rolls in even rows on two trays lined with baking paper. Bake for 25-30 minutes or until golden brown

Serve with tomato sauce & enjoy!
