Saffron Basmati Rice

Cooking rice is easy right? Think again!

There are a few non negotiables when it comes to cooking the perfect rice.


What rice are you using? The quality of the rice is crucial.

Below are two brands that I recommend (Hunza is from Amazon, DAAWAT from Coles)






Another step is to soak your rice for 30 minutes. This isn't crucial however it helps release more aromas in the rice and lessens the cooking time.




Prep Time: 10 minutes Cook time: 20 minutes Servings: 6 People


Ingredients

2 cups basmati rice

1 small onion, finely diced

3 cups chicken broth, vegetable broth or water

1 1/5 tsp saffron

salt

olive oil


Method

  1. In a motar and pestle crush 1tsp of saffron, top with boiling water (about 1/4 cup) and then add an extra half tsp of whole saffron threads. Soak the saffron for at leas 5 minutes to release aromas

  2. Rinse your rice until it runs clear (or soak for 20-30 minutes)

  3. In a heavy bottomed pot, sauté your onion in tbsp of olive oil with a pinch of salt. Sauté until softened, approx 4 minutes

  4. Next add in your rice with another pinch of salt and sauté for a further 2 minutes

  5. Top rice with soaked saffron water and then the broth

  6. Bring to a simmer, then cover with lid and reduce heat to lowest setting

  7. Cook for 18 minutes, then turn heat off. Keep the lid on and allow the rice to steam for a further 5 minutes

  8. Fluff with a fork & Enjoy!
