Easy 10 Minute HEALTHY pancakes

Yes, you heard me.. healthy pancakes!

This is one of my kid's favourite breakfasts, and I love making it for them. Not only are they quick and easy, I always have all the ingredients on hand ready to go!

Prep Time: 3 minutes Cook time: 7 minutes Servings: 4 People


What you'll need;

Ingredients

1 medium - large banana

1 1/2 cups of rolled oats

3 large eggs, 2 whole eggs and 1 egg white only

1/2 cup milk of your choice (I use oat milk)

1tsp vanilla bean paste

2tsp baking powder

a pinch of salt

Optional - a handful of dark chocolate chips or berries

Topping

maple syrup

butter

berries

Method

  1. Add all your ingredients to a blender and blend until smooth (30 seconds) I like to add the ingredients in the below order so that the wet ingredients are toward the bottom; Banana, Eggs, Milk, Oats, Vanilla paste, Baking Powder, Salt

  2. Stir in your chocolate chips or berries

  3. On a nonstick pan over medium heat add your pancake mixture, working in batches, 3 at a time

  4. Once bubbles have formed over the whole pancake, flip them (approx 1-1.5 minutes each side)

  5. Serve with your favourite toppings
